The ST521 SAM automatic scaler, redesigned from vegetable processing technology, has the capacity to load approximately 20 kg of whole fish, including ice, in each loading cycle. It uses a rotary motion of the bottom plate to drag the fish over a disk, while specially coated scrapers remove scales. Water is used to wash and remove both scales and ice from the system. Optionally, scales can be collected in a special basket. A timer can be set for each cycle, allowing the operator to perform other tasks with ease.

During the process, the fillets are not damaged, although the abrasion plates also act on the fins and tail of the fish. It is important to note that this process is not intended for fish that will be exhibited, so it must be filleted before sale.

It can be used to descale sea bream, sea bass (grouper), redfish and other whole fish of similar size, with a length of about 30 cm.
