The need to obtain totally uniform products is an essential commercial requirement. When slicing cured ham, it is extremely important to obtain a precise format in order to avoid as much waste as possible in the slicer. After boning a cured ham or shoulder, it is necessary to shape the piece. Our exclusive pressing system performs a cyclical massage and pressing in three dimensions, essential to achieve a homogeneous presentation and finish.

Possibility of different formats.

The press is prepared for pressing from three sides. By simultaneously pressing two pushbuttons, and by means of hydraulic operation, cylinders are activated, one vertical, one lateral and one rear. These compress the part against the mould in sequential pressure and stop cycles allowing a uniform compression by distributing the work of the successive pressings throughout the piece. At the end of the process and after the opening of the mould gate, the rear cylinder ejects the finished product into a tray.
