After pressing a cured ham or shoulder using one of the PR and PRT model presses, and through this ECOMOULD system, we will be able to place the ham inside a 500 mm long mold. In this way, we will obtain a regular format that allows for increased yields in cubing or slicing the ham or shoulder.

After pressing, the ham or shoulder remains inside the press without being expelled. On a support attached to the press and located in front of the ham outlet, the mold is positioned and the rear cylinder will push the bar into the mold automatically. The system is complemented with a demoulder that will perform two functions: the first is to press the ham into the mold, closing it with the corresponding lid, and the second function will be to unmold the ham after the stabilization and freezing process.
