The need for completely uniform products is an essential commercial requirement. In the slicing of cured ham, a precise format is of utmost importance in order to avoid as much waste as possible in the slicer. After boning a cured ham or shoulder, the final shaping of the piece is necessary. Our exclusive design of the massage system and cyclical pressing system with double cylinder, is essential to achieve the best product with a homogeneous presentation.

Once the ham has been deboned, it is introduced into the rectangular mould of the press. By simultaneously pressing two pushbuttons, a vertical and a horizontal cylinder are operated hydraulically. These compress the ham against the mould in sequential pressure and stop cycles, allowing uniform compacting by distributing the work of the successive pressings over the whole piece. At the end of the process and after opening the mould door, the horizontal piston ejects the finished product into a collecting tray.
