The ham is transported by means of a double stainless steel roller chain, driven by a geared motor and equipped with a speed regulator with electronic frequency variator. The machine includes a ham detection system and once it is correctly positioned, a pneumatic system is activated to fix the ham so that the slicing saw, with a stainless steel disc, can operate. The operator manually positions the ham on the conveyor and the machine continuously cuts the knee.
