In this edition of Alimentaria FoodTech, we highlight the following news that we are eager to share with you

PPJ press for flattening hams

Our latest innovation, the PPJ Press, has revolutionized the process of flattening cured hams. With this technology, we achieve a significant reduction in the height of the ham club, guaranteeing perfect uniformity of the product. In addition, it facilitates the mobility of water released during ripening, resulting in higher yields and shortening the time required for the ripening and curing process.

Ham washing and desalting line by air

Our air ham washing and desalting line has been designed with sustainability and efficiency in mind. This innovation minimizes water and energy consumption, reducing by 80% the salt that is discarded with the washing water. Thanks to a dry high pressure system, we can eliminate the adhered salt and reuse it through the desalination plant. In addition, we achieved a significant decrease in the conductivity of the wastewater, which facilitates a complete washing of the parts with clean water, thus reducing the cost of wastewater treatment.

Pressing and marking

In our wide range of pressing equipment and lines, we have developed a new stainless steel mold with an open machined plastic design, ensuring durability and easy cleaning. In addition, we have implemented laser marking, which minimizes the thermal impact on the ham, offering uniform and effective marking, which improves product traceability.

Efficient Boning

Our boning equipment is designed to offer operators an ergonomic posture that allows them to work with complete freedom of movement. This translates into better use of the ham, a reduction in waste and greater productivity in the production line.
