After pressing a cured ham or shoulder by means of the PR and PRT model presses, and using the ECOMOULD system, we will be able to introduce the ham into the 500 mm long mould. In this way, we will obtain a regular format that allows us to increase yields in cubing or slicing of the ham or shoulder.

After the pressing process, the ham or shoulder remains inside the press without being ejected. The mold is positioned on a support attached to the press and located in front of the ham exit. The rear cylinder will push the bar into the mold automatically. The system is complemented with a demoulder that performs two functions: first, pressing the ham into the mold, closing it with the corresponding lid; and second, unmold the ham after the stabilizing and freezing process.
