The cutting is carried out inside the machine, which protects the operator from any risk of accident. It is equipped with a powerful saw that makes a perfect cut of the ham knee. The machine is made up of a single block, forming an enveloping module.

The ham is transported by a double stainless steel roller chain, driven by a gear motor and equipped with a speed regulator with electronic frequency converter. The machine includes a ham detection system and, once correctly positioned, a pneumatic system is activated that fixes the ham so that the cutting saw, with a stainless steel disc, can perform its function. The operator manually positions the ham on the conveyor, and the machine continuously cuts the ham.
