The ST540 fin tail head cutter relieves the time consuming and frustrating handling of cutting by hand. It improves on cutting speed, cutting accuracy and takes away the cramps in the hands of the operator. Even though the manual handling takes a bit of getting used to, the machine can cut about 10 flounders per minute.

The safety bar placed in front of the blade can be easily adjusted up to a maximum height of 25 mm when changing fish type or grade, thus ensuring optimal safety for the operator. In addition to cutting the heads of small fish such as eels and sprats, the machine has the capacity to make fillet cuts respecting the maximum height.

It is useful to carry out the following operations:

• Cut off the head, tail and fins of flat fish such as flounder, sole, among others
