The ST540 flatfish fin, tail and head cutter transforms time-consuming and frustrating manual operations into more manageable tasks. It performs cutting with high speed and accuracy, eliminating operator hand fatigue. Although an adaptation period is required to master its operation, this machine can process approximately 10 flounders per minute.

The safety bar placed in front of the blade can be easily adjusted up to a maximum height of 25 mm when changing fish type or grade, thus ensuring optimal safety for the operator. In addition to cutting the heads of small fish such as eels and sprats, the machine has the capacity to make fillet cuts respecting the maximum height.

It is useful to carry out the following operations:
